Pork Chops, Corn and Applesauce

Think back to a time in your life when you came home from school and as soon as your adolescent fingers twisted to door knob and the aroma hit your nostrils, you knew that your mom was cooking a cheap, tired, meal that was unfair to you and probably all of your siblings (if you had any). My "I'd rather go to bed hungry" meal was pork chops, creamed corn and applesauce. Thinking about it now, even at the age of 33, It still makes me gag. I have a little PTSD over this "delicacy". I just don't understand why this meal was ever an option. Today, because I had time, I decided to ask my mom why she popped open a can of creamed corn and thought it should be paired pig snout and mashed, processed apples. Her response was " That's a good meal and ya'll loved it" I was baffled. I was appalled. I was flabbergasted, taken aback and then blown away. I couldn't believe that she misread the room for my entire childhood and in fact, I wanted to slingshot myself back to 99' simply to play a game of Red Rover, Red Rover, send some rice right over because....Applesauce? Applesauce??? I was HURT! This made me think. This made me think a lot.. I know i'm not the only child that had a repeat struggle meal throughout their childhood. I have a friend that literally has a panic attack if you try to hand her a plate of tuna casserole. She says that it was her family's "poor man's meal" growing up. I sympathize because when you think about it..should tuna be baked to perfection between some buttered noodles?? No. Not really. So I would like to know.. What was your struggle meal growing up? This is strictly for the 70's and 80's babies because the kids nowadays call a ten piece Chick-Fil-A nugget meal a "struggle".
